Mbimbi’s winning recipe takes gold

In the high-stakes, flour-dusted arena of commercial baking, precision and composure are everything.

For 20-year-old Siphosethu Mbimbi, owner of Qonce-based bakery Crust and Crumble, who was crowned the Eastern Cape’s Snowflake Rising Star for 2026, trusted her culinary instincts under intense heat that proved to be a winning recipe.

Mbimbi came out tops by out-baking nine top emerging talents in a live, high-pressure bake-off at the Blue-Ribbon Hospitality & Cookery School of Excellence in KuGompo City at the weekend.

Nkosomzi Damana from Gqeberha claimed second place, while Nthabiseng Mpinda from Mdantsane finished third.

The prestigious competition brought together 10 finalists from across the province – spanning Gqeberha, Komani, Mthatha, KuGompo, Qonce, and Bhisho – who competed for crucial seed capital, branding support, and professional mentorship.

Finalists delivered a business pitch, presented a pre-baked signature red velvet cheesecake, and tackled a daunting 90-minute live pressure test where they created a spring-inspired dessert using Snowflake flour.

Entries were scrutinised by an esteemed panel of judges, chef Ian Fritz Reynolds, chef Jacques Viviers, and Premier’s technical sales representative, Sibusiso Dhlamini, – who evaluated taste, texture, creativity, and visual elegance..

Where others felt the heat, Mbimbi found her rhythm.

“I was surprisingly relaxed during the pressure test, because this is what I do every day,” Mbimbi said.

“Winning this competition means so much to me, as it gives me the opportunity to grow my business and flourish with the additional support.”

The 2026 edition marked a major milestone for Snowflake, who expanded its scope beyond the traditional Border-Kei region to embrace baking talent province-wide.

Snowflake brand manager, Remolebogile Masupye, said the broader footprint attracted over 100 entries, which were narrowed down to 20 candidates for a bento cake challenge before the final 10 advanced to the live arena.

“She [Mbimbi] almost pulled out of the competition when she found out she was in the top 20,” Masupye said.

“We told her, ‘no, you’re here, just pull out the cake.’

“ A few weeks later she ended up winning.”

Mbimbi revealed what went through her mind when her name was called out as winner.

. “I didn’t believe it. It feels like a dream. Is it my name or am I dreaming?” she said.

Mbimbi walked away with a R20,000 cash prize, Damana (R15,000) and Mpinda (R10,000). All winners received a R30,000 marketing and branding toolkit, business skills training, media exposure, and Snowflake products.

Having completed matric last year, Mbimbi plans to attend baking school and to establish a standalone commercial bakery.

Her next major milestone will see her showcasing her products at Hemingways Mall from October 29 to November 1.
